Christina Khoo, Ph.D., is the Director of Scientific Affairs, Ocean Spray Cranberries, Inc. and joined the farmer- owned cooperative in 2007. Christina received her doctorate with emphasis on nutritional biochemistry at the Food Science and Human Nutrition Department, University of Florida. As a postdoctoral fellow at the Harvard School of Public Health, she conducted human clinical trials in the area of cardiometabolic conditions, studying the effects of diets on the metabolism of triglycerides using kinetic modeling. Dr. Khoo has been instrumental in directing Ocean Spray’s effort in supporting research to help address the public health issue of antibiotic resistance. Her was work has resulted in the generation of a key publication on antibiotic synergy published in July 2017, and one of the largest clinical trials conducted on cranberry and urinary tract infection, showing a reduction in symptomatic urinary tract infections (UTI) and antibiotic use to treat symptomatic UTI. Her current research interest is focused on cranberry bioactive compounds, specifically polyphenols, and their impact on health in collaboration with global universities. The research can help to support the role of cranberry as a nutritional approach to maintaining health. Dr. Khoo has also played key roles in different external organizations to support the important role of healthy food in maintaining health. She received her M.S. in nutritional sciences and Ph.D. in nutritional biochemistry at the University of Florida.
